Spaghetti Night: Fresh and Easy Tomato Sauce

One of my favorites! A fresh, quick, and easy pasta dish
 ingredients: (adjust based on serving)
spaghetti
grape tomatoes
red table wine
chopped fennel seed
salt
Italian seasoning
fresh ground pepper
grated Parmesan cheese
olive oil
optional: chopped spinach, or fresh basil


Boil water for the spaghetti and cook al dente (or to your liking)


 Chop up grape tomatoes, a small amount of green pepper, white onion, and garlic (mince)



Parm

in a medium skillet, add one tablespoon of of olive oil, salt, pepper, fennel, Italian seasonings and heat on medium.
 add chopped onion, green peppers, and saut√© until onion is translucent


add chopped tomato and garlic and cook 2 minutes

 add one to two cups of red wine and reduce 5-8 minutes


add chopped basil or spinach until wilted

add a dash of olive oil to the noodles and toss



add sauce and parm
 enjoy with a glass of red!
